1. Smoked Baby Back Ribs

Ingredients:

  • 2 racks of baby back ribs
  • 1/4 cup brown sugar
  • 2 tablespoons paprika
  • 1 tablespoon black pepper
  • 1 tablespoon salt
  • 1 tablespoon chili powder
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon cayenne pepper (optional)
  • 1 cup barbecue sauce

Instructions:

  1. Preheat your Goldens' Cast Iron grill to 225°F (107°C) for low and slow cooking.
  2. In a small bowl, combine the brown sugar, paprika, black pepper, salt, chili powder, garlic powder, onion powder, and cayenne pepper (if desired) to create a dry rub.
  3. Remove the membrane from the back of the ribs and generously coat both sides of the racks with the dry rub.
  4. Place the ribs on the grill and smoke them for 4-5 hours, or until the meat is tender and easily pulls away from the bone.
  5. Baste the ribs with your favorite barbecue sauce during the last 30 minutes of cooking.
  6. Once done, remove the ribs from the grill, let them rest for a few minutes, and then slice them into individual servings.

2. Grilled Pork Chops

Ingredients:

  • 4 bone-in pork chops
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions:

  1. Preheat your Goldens' Cast Iron grill to medium-high heat.
  2. In a small bowl, combine the olive oil, minced garlic, dried thyme, dried rosemary, salt, and black pepper to create a marinade.
  3. Brush both sides of the pork chops generously with the marinade.
  4. Place the pork chops on the grill and cook for approximately 6-8 minutes per side, or until they reach an internal temperature of 145°F (63°C), followed by a 3-minute rest.
  5. Remove the pork chops from the grill and let them rest for a few minutes before serving.

3. Pulled Pork Butt

Ingredients:

  • 1 bone-in pork butt (approximately 8 pounds)
  • 2 tablespoons olive oil
  • 2 tablespoons brown sugar
  • 1 tablespoon paprika
  • 1 tablespoon salt
  • 1 tablespoon black pepper
  • 1 tablespoon chili powder
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon cayenne pepper
  • 1 cup apple juice

Instructions:

  1. Preheat your Goldens' Cast Iron grill to 250°F (121°C) for low and slow cooking.
  2. Rub the pork butt with olive oil to help the dry rub adhere to the meat.
  3. In a bowl, combine the brown sugar, paprika, salt, black pepper, chili powder, garlic powder, onion powder, and cayenne pepper to create a dry rub.
  4. Generously coat the pork butt with the dry rub.
  5. Place the pork butt on the grill and cook for approximately 1.5 hours per pound, or until the internal temperature reaches 200°F (93°C).
  6. Halfway through the cooking process, spritz the pork butt with apple juice to keep it moist.
  7. Once done, remove the pork butt from the grill, tent it with foil, and let it rest for about 30 minutes.
  8. Shred the pork butt using two forks and serve it with your favorite barbecue sauce.
